"An evening soirée spent dining on O’Neill’s fresh and inventive creations, culled from the garden and the sea, or imported from the finest purveyors on the planet, tends to cause those contented looks on the face of patrons chefs live to witness.
I know his cooking caused me wonder aloud how it was possible to have such an extensive menu in such an out-of-the-way place. It was like dining in the finest eateries of London, Paris or New York, but with no traffic, noise, pollution, crowds, dust or parking problems."

"Eoghain cooked a lunch for us out in the middle of the rolling, beautiful seas off Barbados when I was part of shoot of Tony Bourdain's hit show "No Reservations". Between the six or so of us and a camera crew he had to serve three dishes out of coolers with a hot plate. That's it! What Chef O'Neill pulled off on a boat should be what many Chefs should hope to pull off with a staff of 12 in a fully equipped land based kitchen on a good day!--"

"I have had the pleasure of meeting many Chefs because of my work. I am the author of Culinaria:The Caribbean and Nyam Jamaica - currently working of Barbados Bu'n-Bu'n - all part of a Culinary Travel Series. I also contribute to many Caribbean magazines and used to be a Food Critic/writer for Food, The Gleaner (Jamaica). I have covered many Caribbean Festivals, even worked as a consultant to some, have attended and covered The Food Network Food & Wine Festival in Miami. Of all the wonderful Chefs I have come into contact with (and there have been many) together with Miss Norma Shirley of Jamaica who I have deemed the Grand Dame of Caribbean cuisine, Eoghain has managed to give my tastebuds pure unadulterated pleasure in every morsel. For like Miss Norma, he takes our Caribbean ingredients, blends them with the finest from other lands, fuses them with gourmand methods, twists them into gourmet heights without losing that exotic island taste. Eoghain
shows all Caribbean Chefs that our cuisine has a rightful place in kitchens worldwide. I nominate him the Grand Master of Caribbean Gourmet Cuisine."
